Mother's Jamaica needs Lead Cooks (Kingston & St. Andrew, St. Catherine, Jamaica)

We are expanding our operations and are seeking proficient individuals to join our Canteen Division as LEAD COOKS. The successful candidates should be flexible, creative, be able to work on their own initiative and be able to meet deadlines stipulated by the company.
Key Responsibilities
  • Ensure that standards and specifications for the preparation of specific menu items stipulated by the company are adhered to at all times.
  • Minimize waste and spoilage by monitoring production of menu items and following standardized recipes.
  • Inspire and motivate the team to achieve specified sales and profit targets.
  • Ensure that all health, safety and food hygiene requirements are met.

Required Skills:
  • Sound knowledge of food preparation techniques.
  • Knowledge of good sanitation and hygiene practices.
  • Good communication and people relations skills.
  • Knowledge of kitchen equipment.
  • Ability to lift a minimum of 50 pounds.
Qualification and Experience
  • NVQ-J Level II Certification in Food Preparation from HEART Trust NSTA or a recognized institution.
  • Minimum of three (3) years experience in a high volume and quality food production environment.
  • Four (4) CXC subjects including Mathematics/Accounts and English Language or equivalent qualification.
  • Note: Relevant certification is required

Chef De Partie (Montego Bay Jamaica) - Caribbean Producers Jamaica

 SUMMARY:



The Chef De Partie reports directly to the Industrial Relations and Welfare Specialist and is responsible for day-to-day culinary operation of the Staff Canteen. Functions include maintaining food safety and quality standards, menu creation, and inventory management.


Duties and responsibilities may include:
  • Manage all activities in the kitchen, including food preparation and production, and management and training of kitchen staff.
  • Ensure efficient, cost-effective operation and profitability of food production.
  • Supervise and inspect all preparation and cooking equipment on a regular basis to ensure that they are kept clean, sanitary, and in perfect operating order. Report any defects to the Maintenance Department.
  • Ensure that food products, presentation, and plating are of the highest quality, and are prepared to serve in a timely manner.
  • Ensures that all foods prepared conform to CPJ standards and Public Safety Regulations.
  • Assume the role as Team lead in his or her absence.
  • Create delectable meal plans and share with Team Lead on a weekly basis.
  • Assure kitchen personnel is trained in best practices as it relates to cleanliness and sanitation practices.

Skills and Specifications
  • At least a formal culinary training or an Associate Degree in Hospitality, Food and Beverage Management.
  • Self-motivated with the proven ability prioritize and work independently.
  • Must possess the ability to plan, organize, supervise, inspect, and evaluate work of subordinates.
  • Must possess the ability to maintain a productive working relationship with other departments.
  • Should possess good written and verbal communication skills.
  • Ability to work flexible hours as the needs of the service dictate, including out of normal hours as required.
  • Minimum 2-5 years related work experience.
  • Effectively completes all other activities as delegated by the supervising authorities.
  • An understanding of the principles of good customer service.
  • Knowledge and understanding of Health and Safety Regulation
  • Culinary Arts or its equivalent training, licenses, and/or certifications

PRODUCTION WORKER

Job Summary:

Reporting to the Production Supervisor, the Production Worker's primary objective is to ensure that all products being manufactured are in coordination with quality control standards and production operations procedures and ensure output at an efficient level with a predetermined delivery time to the Sales team.

Main Responsibilities:

To ensure the full manufacturing of products in coordination with quality control standards.
Workers should be prepared to be rotated based on scheduling over 3 shifts covering a 24-hour period.
The employee may be required to push, pull, carry, and/ or lift up to 100 pounds.

SANITATION WORKER

Job Summary:

Reporting to the Sanitation Manager, the Sanitation Worker’s primary objective is to ensure that the facilities are sanitary and obstacle-free and that the environs are in an aesthetically pleasing condition.

Main Responsibilities:
  • To ensure the facilities are sanitary and obstacle-free and that the environs are in an aesthetically pleasing condition.
  • Dispose of waste as necessary.
  • Clean and maintain interior and exterior infrastructures.
  • Clean utensils, equipment, and vehicles.
  • Distribution of chemicals and cleaning supplies.

Key Competencies for both roles (Production & Sanitation Worker):
  • Good communication skills.
  • Able to work in a team.
  • Able to follow precise instructions.
Qualifications and Experience for Both Roles (Production & Sanitation Worker):
  • High School Leaving Certificate.
  • Two CXC passes.
  • Baking, Mixing, and Machine Operating skills (would be an asset)
  • Two years’ experience in the food/manufacturing industry.
  • Possession of a valid Food Handlers’ Certificate.
Physical Demands/Work Environment:
  • Three shift rotations over a 24-hour period. Saturday and Sunday are mandatory.
  • Work involves physical management (push, pull, carry) and operation of equipment and tools.
  • The noise level in the work environment is usually moderately loud when in the production area.

Chef de Cuisine (Kingston, Jamaica) - Caribbean Producers Jamaica (CPJ)

The Chef de Cuisine will report to the Operations Manager, Kingston Retail. S/He is responsible for planning and directing food preparation. As well as upholding the operating standards of the CRU Restaurant and CPJ Deli while maintaining consistency through food and beverage service standards. S/he is responsible for facilitating training, development, and supervises team members, while applying the relevant service principles in ensuring guest expectations are met.

Duties and Responsibilities:


  • Create, maintain and ensure the quality and standards of foods prepared.
  • Inspect supplies, equipment, and work areas to ensure conformance to established standards and regulatory bodies.
  • Create menus, design corresponding recipes and oversee the preparation of those recipes.
  • Estimate amounts, costs and requisitions supplies along with equipment to ensure efficient operation.
  • Evaluate and solve procedural problems to ensure safe and efficient operations while controlling costs and meeting commitments.
  • Promote customers interaction, build relationships, and contribute towards meeting sales requirements.
  • Train and otherwise instruct employees in proper food preparation procedures to ensure compliance with established standards.
  • Ability to manage menu pricing and inventory.
  • Creates weekly rosters to facilitate efficient operation and timely delivery of services.
  • Maintenance of excellent service delivery through efficient and effective customer service and maintenance of high food service standards.
  • Adhering to all standard operating procedures for the company, while ensuring cost controls are consistently utilized.
  • Guiding the planning of external and internal marketing and sales through promotional activities, while keeping in constant contact with all in-house brand management and promotions.
  • Maintenance of compliance according to the law, ensuring regulatory processes and company policies are consistently maintained, pertaining to alcoholic beverages, trade agreements, food safety, and overall operations.
  • Monitor and facilitate payroll processes for Time and attendance adhering to deadlines set on a bi-weekly/monthly basis for CRU, Market and Deli.
  • Maintains strong relationships with key accounts, vendors and trade partners.
  • Implementation and monitoring consistency of food and beverage policies and procedures throughout Retail store, Deli, and CRU Bar.
  • Monitor the expectations of guests, through overall oversight service encounters on a regular basis to ensure consistency of service.
  • Coordinate closely with the relevant and associated brands through the developmental processes of foods, spirits, wine and cocktail menus, incorporating sales promotional programs where applicable, for both CRU Bar and Deli.
  • Facilitate and assist with HR processes through staff recruitment, evaluations, motivation, and any other duties assigned with reference to CPJ Employee Handbook.
  • Uphold and ensure employees adhere to set uniform policy and standards set by Caribbean Producers Jamaica Ltd.
  • Perform complete oversight of all relevant inventories throughout the entire department. (CRU, Market and Deli).
  • Any other duties as may be assigned.

Education and Experience:

  • Bachelor’s Degree in Culinary Arts from an accredited institution. 
  • 5 - 8 years’ experience in a management position in a fast-paced Food and Beverage, customer-focused, high traffic environment.
  • Experience in menu planning and pricing required. 
  • International experience in a similar entertainment organization would be an asset.
  • Advanced computing knowledge especially Microsoft Office suite.
  • Ability to work flexible hours as the needs of the service dictates, including out of normal hours as required
